Our First Texas Crawfish Boil

This Saturday we went to our first Texas crawfish boil. Now in Alabama I have been to some crawfish boils here and there. But Texans are crazy about crawfish or as the call the "mud bugs". It is officially season here. Being so close to Louisiana some folks drive over to pick them up and bring them back so they will be 24 hours or less out of the water. One of the guys who teaches our Sunday School class is from Louisiana so he and his wife hosted it at their house. They have a really pretty house in a newer neighborhood on the northeast side of Houston. The back yard was the perfect set up. He had all his pots and cooking set up on tables and some New Orleans Cajun Zydeco music playing. It was a beautiful day. Nice and warm and sunny. Their house was decorated with art work from New Orleans and even the restroom had a French sign La Toilette on the door. It was a really neat house. Now the experienced crawfish eaters, showed up with table just for eating crawfish. The had bars on each side to hold paper towels, covered in paper, and a hole in the middle to throw your crawfish shells. I had to get a good lesson because honestly, this is the first time I had to peel my own. Usually I eat the little tails as fast as someone (whoever I can sucker) gets them open for me. And no, I do not suck the heads. But lots of people were slurping the insides out and honestly that almost ruined it for me. There were potatoes, corn, mushrooms, and artichokes. It was really spicy. The spice they used was called "Slap Your Mama". It was a fun experience. We are looking forward to a few more this season and I think I am improving on my "bugging"!
